To Eat Wisely, we advocate eating mostly plant-based, raw, whole-foods. Many, many studies support increasing plant foods in our diets to help our bodies prevent or reverse chronic diseases people deal with in the Western world.

That means vegetables (especially dark green leafies), fruits, nuts, seeds, grains, good fats. Each could be an entire article. And will be.

To start with, here’s a super simple salsa I make almost weekly. With unsalted organic corn chips, hummus or guacamole, you’ve got a filling, scrumptious lunch or dinner.

Salsa Fresca

(from Violet Foushee)

Makes about 1 ½ cup
4 medium tomatoes, quartered

3 sprigs cilantro

½ small onion or 2-3 green onions

2 green chilies (or 1/3 small can)

½ lemon, juiced

½ teaspoon sea salt

teaspoon freshly ground pepper

 

Will fit in small food processor. Chop till desired consistency- chunky or smooth. Will keep in fridge for up to 10 days, if not gobbled up.
